To use any code all you have to do is enter it when you log into AJ. Note that codes are NOT case sensitive. Some codes give you 1000 gems, but most give only 500 or 100. Others give you promo gifts (like birthday cakes) or even diamonds (only one so far though). 

If the code has expired or you've used it before it will allow you to log into Animal Jam, but no gems or gifts will be rewarded. If it isn't a code you'll receive a notice saying so and will not be logged into the game. Have fun shopping around Jamaa with your newfound gems!
